I love to eat oat pancakes for breakfast and it is an incredibly delicious and nutritious alternative to the traditional breakfast food. The beauty of this recipe is that it is high in fiber, protein and it's sugar-free and tastes amazing. Oatmeal is very good for you and this delicious pancake is also incredibly easy to make, just combine all the ingredients together in a blender and blend to mix.

Combine all the ingredients in a blender and mix until smooth.

Leave the oat pancake batter to stand for about 5 minutes until is has slightly thickened.

Heat a non-stick pan and cook each side of the pancake for 1 minute or until it is slightly bubbling on the top, then flip to the other side and cook until golden brown on both sides.
Serve warm on its own or with a drizzle of maple syrup and fresh fruit of your choice.
